1. In a medium bowl, crack two eggs and whisk in 1/4 cup of cream. Soften cream cheese and vigorously whisk until combined with the egg and cream.
  2. Add three Tablespoons of Almond meal, 1/4 teaspoon of sea salt, 1/4 teaspoon of stevia and 1/4 teaspoon baking powder, Whisk until all ingredients combined.
  3. In a medium heated pan, add two teaspoons of oil and pour in four single Tablespoons of batter to form small blinis. The mix should make around eight blinis. One serving is four blinis. Cook for around 1-2 minutes either side and remove and place on paper towel to soak up excess oil. If you need to add more oil for the second batch, add one or two teaspoons.
  4. Plate blinis and then pipe three dollops of mascarpone on each blini. Place a caper on two of the dollops of mascarpone and a small piece of chive on the other. For the recipe we actually used caviar on one of the dollops which worked really well. If you can't get caviar, capers are fine.
  5. Roll smoked salmon strips up into rose shapes and cut in half. Spread the "petals" outwards and place in the centre of each blini the cut side down and serve
