HAM, TOMATO CHEESE SCRAMBLED EGG
  1. Roughly chop ham, finely dice tomato and finely chop spring onion and set aside.
  2. Heat a small pot and add 1 tsp butter
  3. Lightly whisk eggs and add to pot and constantly stir
  4. Once the eggs start to firm up, remove from the heat and add cheese, tomatoes, spring onion and ham. Return to the heat for 30 seconds stirring through ingredients then remove from heat again
  5. Plate on lettuce or serve with salad
