In a medium sized bowl add beef mince and diced red onion. Season with salt and pepper and add a splash of Worcestershire sauce. Mix through
Cut egg plant into 1cm thick rounds and season with salt
Make the beef mince into two equal patties and In a hot frying pan, add two teaspoons of oil and then add the patties, egg plant rounds and bacon
Cook on a high heat, flipping everything after 3-4 minutes and repeat cooking on the other side. You may need to remove the bacon earlier
While still in the pan, add cheese on to one patty and top with bacon. Cover with a lid until the cheese melts
Scatter salad leaf on a plate and then add one egg plant round, then the patty with cheese and bacon then add squirt of no sugar added tom sauce and one teaspoon of light sour cream. Then top with the other patty and other egg plant round.
