BEEF WITH CAULI BEET PUREE
  1. In a hot pan, add three teaspoons of butter and add two halves of peeled shallot, two baby carrots, 2 stems of asparagus and 125g eye or scotch fillet beef. Season with salt and cook for three minutes on either side
  2. Meanwhile, steam on the stove or in the microwave 125g cauliflower. If using a microwave, use a glass dish and add two tablespoons of water and cover with cling film. Once cooked, drain water and place in a blender
  3. Add one teaspoon of butter, one teaspoon of light sour cream, one Tablespoon of pouring cream, a pinch of salt and pepper, 1/8th teaspoon of garlic powder and one small cooked baby beet. Blend until smooth
  4. Spoon the puree onto a plate and add beef, carrots, shallots and asparagus
